The first day of school after the summer vacation was always a bit unsettling; It was abrupt every time, but it was still one of the highlights of the year. I feel the same way when I upload this post, only that the gap between last semester and today was much longer than normal summer vacation. My sabbatical from blogging was filled with a military schedule and duty, and just last week I was able to take a quick trip to southern Europe and relax. In the photos, the Atlantic lashes the coast of Spain.

When I was an exchange student in Chicago eons ago, almond butter sandwiches were a staple at school. I don't think it's as popular anywhere as in America. Almond butter recipe is nutritionally similar but has nominally less saturated fats and slightly more calcium and iron. It's also a better source of vitamin E and magnesium. Perhaps the biggest difference is that peanuts are often overgrown and susceptible to fungi called aflatoxins that eat away at the immune system. If they're not organic, the peanuts will likely get full of pesticides.

The advantage of making your own almond butter recipe is that you can regulate the intake of sugar and additives. Use honey, maple syrup, or agave to sweeten and a pinch of Himalayan salt to balance. Almond butter recipe is so thick that you can roll sweet balls and top them with carob or chocolate. You can easily add it to salad dressing, smoothies, soups, and baking. Roast the almonds in their skins for a stronger flavor.

The first day of school would be a fiasco if I had to talk to myself. Instead, I would like to know how you are. What are your latest accomplishments, hopes, and needs? What's new in blogging? How can I help you?
