Roasting the beet wholly is the simpler option that you can try whereas the other method is cutting it into cubes and then roasting it. The former option is better for freezing them for a maximum of one week in the refrigerator or keeping them fresh inside an airtight container.

Freezing the beet greens

The greens make up for a great side dish which is healthy and quick. Pick up the healthy and young leaves with soft stems and wash them nicely. Blanch a bunch of them separately one by one for maximum of two minutes.

Cool them down instantly and drain out the water. Lay the leaves flat into the freezer bags for making them take less space.
