Basic jackfruit curry

This jackfruit curry recipe is a very easy one to prepare and is also held to be the Indian style curry preparation of jackfruit. The simple spices that go in this curry give an amazing flavor.


  • Two cups of jackfruit, cubed
  • One cup onions, sliced
  • One tbsp each of ginger and garlic
  • One cup tomatoes, chopped
  • Two tsp coriander powder
  • One tsp cumin powder
  • One and a half tsp red chili powder
  • One-fourth tsp of turmeric powder
  • Three tbsp oil
  • Salt as per taste
  • One small cinnamon stick
  • Four cloves
  • Three bay leaves
  • Two tbsp coriander, chopped

In a bowl, marinate the jackfruit with oil, turmeric, and salt and leave it for fifteen minutes. Take a pressure cooker and heat the oil in it and then sauté bay leaves, cloves, and cinnamon in it till they give aroma. Add in garlic and ginger now and sauté for another five minutes.

Put in the spices and tomatoes now and cook well enough to not burn the mix. Add the jackfruit now and sauté for some time more. Now, put one and a half cup of water, close the lid of the cooker, and let the curry cook until three whistles.

After that, cook the curry for 5 minutes with the lid open and keep stirring. Garnish it with coriander and serve.

Jackfruit and sweet potatoes curry

Want your jackfruit curry creamy but not with any gluten? You can impart a rich texture to your curry with the sweet potatoes and here is the recipe for it.


  • 400 g can each of jackfruit, tomatoes, and coconut milk
  • One capsicum, diced
  • Two sweet potatoes, chopped
  • One onion, chopped
  • Three garlic cloves, minced
  • One inch ginger block
  • One red chili pepper
  • One tsp each of turmeric powder and mustard seeds
  • One and a half tsp each of garam masala, cumin seeds, curry powder
  • Half tsp sea salt
  • Some black pepper, crushed
  • One tbsp olive oil

Heat oil in a pan and sauté onions in it till they become golden. Now put in the chili pepper, ginger, and garlic and cook till they become aromatic. Add all the spices and then cook for another minute.

Put in capsicum and sweet potatoes and coat them with the spices well. Now, add pepper, tomatoes, and one-fourth cup of water and mix everything nicely. Let the mix simmer for around ten minutes.

Add diced and de-seeded jackfruit into the mix now and gradually pour coconut milk in the mix, stirring gently. Allow the mix to boil till the sauce thickens and jackfruit gets tender. Finally, garnish with coriander and serve hot.

Sweet jackfruit curry (South Indian style)

This dish is also called the Ponsa Ambat in Konkani and is an outstanding combo of sweet and savory flavors. The interesting part is that it is made with the ripened jackfruit that is usually not preferred for curry making.


  • Ten bulbs of ripened jackfruit, peeled and chopped in half
  • Three-fourth cup each of grated jaggery and chana dal
  • 12 cashew nuts
  • Salt as per taste

For the paste:

  • One cup coconut, grated
  • Two red chilies
  • One-fourth tsp turmeric powder

For seasoning:

  • One tsp each of mustard seeds and coconut oil
  • Half tsp cumin seeds
  • One spring of curry leaves

Cook the chana dal with two cups water until 4 whistles in a pressure cooker. Simultaneously, prepare the coconut masala paste by grinding the given ingredients together. Boil jaggery and water together till it gets dissolved completely and then filter the mix.

Take a deep pan and pour the jaggery water and cooked chana daal in it. Mix well and then add cashew nuts to this mix. Let it boil for around five minutes.

Now add the coconut masala paste and mix everything well. Add salt and then cook for another two minutes. Put in the chopped jackfruit bulbs now and cook for some time on low heat until the curry thickens.

Prepare the seasoning in a shallow pan till the seeds clutter and then garnish this mix over the curry. Serve hot with white cooked rice.

Jackfruit curry (Bengali style)

  • Two cups jackfruit, diced and boiled
  • Half cup onion, chopped
  • Two tbsp each of cashew nut paste and tomato puree
  • One-fourth cup plain curd
  • One tsp garlic-ginger paste
  • One-fourth tsp turmeric powder
  • Half tsp garam masala
  • Three red chilies, Kashmiri red
  • One tsp chili powder
  • Half tsp each of cumin and coriander powder
  • Two tsp panch phoran, crushed roughly
  • Four tsp mustard oil
  • Two tbsp ghee
  • Salt as per taste

Marinate the jackfruit with mustard oil, garlic-ginger paste, curd, garam masala, and turmeric powder well and let it rest for ten minutes. Heat ghee in a deep pan and sauté the onions and red chilies in it. Now put in cashew nut paste, tomato puree, and the spices and cook till the mix gets aromatic.

Add marinated jackfruit and combine it well with the spice mix. Keep stirring and cook for about 6-7 minutes. Meanwhile, crackle the panch phoran in a separate pan with one tsp mustard oil.

Pour this mix over the curry and serve hot.

Thai jackfruit curry

Thai dishes are known for their unique combination of various flavors and exquisiteness. So, here is our Thai take on the ever-popular jackfruit curry recipe.


  • Two cans jackfruit, drained and diced
  • One big onion, diced
  • One big green and red pepper each, sliced
  • 50 g mushrooms, sliced thin
  • 120 g cashew nuts
  • One can of coconut milk

For the curry paste:

  • Three big spring onions, sliced thin
  • Two red chilies
  • Eight lime leaves and garlic cloves
  • One bunch basil leaves
  • One tbsp lemon juice
  • Two tbsp coconut aminos
  • 2 tbsp coconut oil
  • One tbsp coconut sugar
  • Four tbsp tamari sauce

Take all the curry paste ingredients and blend them in a food processor to get a smooth paste. Heat two tbsp coconut oil in a deep pan and sauté the onions and peppers till they get soft. Add mushrooms and jackfruit in the pan and sauté everything for another three minutes.
